Justine completed her BSc in Honours bio-organic chemistry at McGill University in 2023. During her undergraduate degree, she worked with Prof. Audrey Moores where she worked on the optimization and scale up of the extraction of chitin from crustacean shell and the deacetylation of chitin in chitosan. She re-joined the group as a PhD student at the beginning of 2024 where she works on biomass valorization through the synthesis of polysaccharide nanocrystals, the extraction of chitin and minerals found in crustacean shell and their application in nanochitin based composite material. In her spare time, she enjoys doing baking crochet/knitting, hiking and more!
